Full Subprimal Truss Rack Kit for PRO 40s purchased September 2019 to November 2020. Since these units are different sizes we have designed them for each unit specifically.

Full subprimals are recommended for dry-aging because the larger the cut of beef, the longer you can dry-age for the best results

Our patent pending Truss Rack is designed to make loading and securing a full subprimal fast, easy, and with clean hands 

Racking a full subprimal vertically optimizes airflow and allows for peak capacity in the space 

The truss rack will also leave a 1.5" imprint on the subprimal so you always know where to cut your steaks!

Includes (1) Truss Rack, (1) Truss Rack base, and (1) 6m length butchers twine
